Gazpacho is essentially a vegetable smoothie. It is a simple, yet
stunning dinner party starter or a refreshing summer lunch. It is
packed with vitamins and minerals and gets you well on the way to
your five a day.

Serves 2


  • 1/2 red onion
  • 1cm sliver of ginger, peeled
  • 2 garlic cloves
  • 3 large tomatoes
  • Large chunk of bread
  • 1 red pepper, deseeded
  • 50ml rapeseed oil
  • 1/2 - 1 red chilli
  • 3 tablespoons of red wine vinegar
  • Zest and juice of 1 lime
  • 1 teaspoon of honey
  • 600ml passata
  • 250ml good quality vegetable stock
  • Herbs and a couple of slices of a carrot to decorate


Chop the vegetables into chunks
Blend all the ingredients until smooth adding more stock or water to get the
desired consistency
You can serve immediately or keep in the fridge in an airtight container until
needed (up to 24 hours)
