Giant breakfast blinis

Blinis come across as being really indulgent and special and yet take no time to make. These are giant, so one or 2 per person are enough!

Serves 2


  • 70g plain flour
  • 70g buckwheat flour
  • 1/3 tsp baking powder
  • Pinch of salt
  • 175ml milk
  • 1 egg
  • 1 tsp butter, melted
  • 1/2 teaspoon of dried dill
  • 1/4 teaspoon of sumac
  • Zest from 1 lemon
  • Dollop of creme fraiche
  • Smoked salmon
  • Fresh dill and a gold leaf to decorate (optional)


Combine the flour, spices, herbs and lemon zest with the baking powder and salt
Make a well in the center and crack the egg in, start whisking it in
Add the milk, gradually and keep whisking
Add the melted butter
Heat vegetable oil in a pan and fry the batter in batches, until golden brown
Serve warm with creme fraiche and the smoked salmon
