Hawaiian Tuna Poke

Poke is a salad with raw tuna, which we originally discovered a few years ago researching the cuisine of Hawaii and fell in love with the easy preparation and wonderful fresh flavours. In the last year, it has taken the States by a storm and is now making it’s way to the UK. It is important to use very fresh tuna – this might be a little pricey, but it is such a rich meat, you do not need too much.

Ingredients

  • 200g of sashimi grade tuna, cut into small cubes (1/2 cm)
  • 3 spring onions, finely sliced
  • 1 tablespoon of black (or white) sesame seeds
  • 20g macadamia nuts, finely chopped
  • 1/2 an avocado, cubed
  • Juice and zest from 1 lime
  • 1/4 teaspoon of finely minced (or zested) fresh ginger
  • 1 tablespoon of sesame oil
  • 1 tablespoon of soya sauce
  • 1/4 teaspoon of chilli flakes
  • 1 teaspoon of dulse seaweed (optional)

Method

Combine all the ingredients together and season to taste
Leave in the fridge for 30 minutes for the flavours to incorporate
Serve with fresh green leaves or bread
