Marinated Prawn Parcels

These little parcels are packed with flavour and can either be served as a canapé or a great sharing starter.

Ingredients

  • 150g raw large prawns
  • Sweet chilli sauce to serve alongside
  • Pack of filo pastry
  • 1 egg
  • Black sesame seeds to sprinkle
  • Prawn marinade:
  • Small handful of coriander leaves, chopped
  • Zest of 1/2 lime
  • 1/2 red chilli, finely chopped (or more to taste)
  • 1/4 teaspoon of fresh ginger, finely chopped
  • 1/2 teaspoon of soya sauce

Method

Combine the prawns with the marinade ingredients in a bowl and leave to stand at room temperature for 20 minutes
Preheat the oven to 200C
Lay 2 sheets of filo on top of each other and cut into thin strips (10cm)
Place 2 prawns at the bottom of each pastry sheet and roll up, tucking the sides in
Place on a baking tray lined with parchment
Whisk the egg with a pinch of salt and brush the tops of the parcels and sprinkle with black sesame seeds
Bake in the preheated oven for 15 minutes or until cooked through and golden brown
Serve with a sweet chilli sauce
