The combination of peach and Chai spices in these cupcakes is sublime.

Cupcake batter

  • 150g soft light brown sugar
  • 150g unsalted butter, at room temperature
  • 200g self-raising flour
  • 50g peach purée
  • 4 medium eggs at room temperature
  • 1 teaspoon Masala Chai spice
  • 2 fresh chopped peaches plus one more for decoration

Buttercream icing

  • 150g unsalted butter at room temperature
  • 300g icing sugar
  • 2 tablespoons of peach purée

Method

Preheat the oven to 180C
Line 12 muffin moulds with cupcake cases
Place the flour, sugar, butter, peach purée, eggs and Masala Chai spice into a bowl and whisk until light and fluffy
Stir in the chopped peaches
Spoon into the prepared tins
Bake for 20-25 minutes until a skewer inserted into the middle of one of the cupcakes comes out clean
To make the frosting, simply whisk the ingredients until smooth and fluffy
Add more sugar or a little water to adjust the consistency of the icing
Pipe a little icing over each cupcake and top with a slice of peach
