Rösti is a great side dish, but also works beautifully as part of brunch with salmon and a poached egg on top.

Serves 2


  • 3 finely chopped large shallots
  • 1 large potato (waxy- such as King Edward)
  • 1 large sweet potato
  • Handful of grated cheddar
  • Teaspoon of dijon mustard
  • 6 sprigs of parsley


Grate the potatoes into a bowl
Add the cheese and mustard
Chop the parsley in with the potatoes and season generously with salt and pepper and mix with your hands
Heat olive oil and a knob of butter in a small pan on a medium heat
Pop your rösti mixture in and press down
Preheat the oven to 150C
When the mixture is starting to colour, pop into a preheated oven for 40-45 minutes until golden brown all over
