Underrated root vegetable, yet easy to prepare and has a unique flavour.
- Salsify root
- Clean the root thoroughly under cold running water
- Cut into thick slices
- Place in acidulated water (water with a squeeze of lemon juice)
- Simmer in salted water for 30 minutes until soft
- Drain and fry in a little butter
- Serve sprinkled with herbs with a squeeze of lemon
