Salsify Easy

Underrated root vegetable, yet easy to prepare and has a unique flavour.


  • Salsify root
  • Butter
  • Herbs
  • Lemon


  1. Clean the root thoroughly under cold running water
  2. Peel
  3. Cut into thick slices
  4. Place in acidulated water (water with a squeeze of lemon juice)
  5. Simmer in salted water for 30 minutes until soft
  6. Drain and fry in a little butter
  7. Serve sprinkled with herbs with a squeeze of lemon
