Scallop skewers

These are luxurious starters.

Serves 4


  • 12 scallops
  • 8 spicy mini chorizo sausages
  • 30g unsalted butter, room temperature
  • 1 tablespoon of chopped chives
  • Juice of 1/2 lemon
  • Large pinch of salt


Preheat the BBQ to 200C
Combine the butter with salt, lemon juice and chives
Simply thread the scallops and chorizo on skewers
Place on the griddle and turn after 2 minutes
Leave for another 2 minutes until cooked and spoon the butter on the scallops
Serve with green salad
