This is a wonderful side dish to chicken and fish or can just be served with greens and rice.
- 2 tablespoons of smoked oil
- 2 whole courgettes, sliced
- 1 small white onion, finely chopped
- Large pinch of salt
- 2 garlic cloves, finely chopped
- Juice from, ½ lemon
- 200ml white wine
- 1 tablespoon of roughly chopped dill
Heat the oil in a frying pan until hot and fry the courgette slices on both sides until golden brown.
Cook them in batches, so you don’t over crowd the pan.
Remove them from the pan once cooked and arrange on a serving plate or bowl.
Add more oil if necessary and add the chopped onion with the salt.
Cook until the onion is soft and translucent (around 10 minutes).
Add the garlic and fry for another minute.
Pour in the juice and white wine and simmer until the liquid has reduced by a half.
Check for seasoning and pour over the courgettes.
Serve topped with fresh dill.
