Whole cauliflower is great to serve as a stunning side dish or a vegetarian main. It will look great on a dining table next to your roast. Just make sure you reserve some of the sauce to serve alongside the cauliflower.

Ingredients

  • 1 head of cauliflower
  • For the sauce:
  • 200g natural yoghurt
  • 2 tablespoons of grated parmesan (or a vegetarian version)
  • 1 tablespoon of garam masala
  • 1 teaspoon sumac
  • 1 tablespoon (or to taste) Sriracha chilli sauce (or a brand you like to use)
  • 1 teaspoon pomegranate molasses
  • 1 teaspoon of salt

Method

Preheat the oven to 200C
Cut of the leaves and the stem of the cauliflower and place on a baking tray
Combine the sauce ingredients and rub all over the cauliflower
Bake in the bottom half of the oven for 45-90 minutes (depending on the size of the cauliflower)
Once a cutlery knife can be pushed into the vegetable with only a slight resistance, it is ready
