Tomato galettes

These delicious galettes take 10 minutes to get into the oven and then only 20 minutes to bake. Not only are they quick to make, but also delicious to eat.


  • 1 pack of puff pastry
  • 50g ricotta cheese
  • 150g soft goat cheese
  • 1 egg
  • Salt and pepper to taste
  • 4 tomatoes, cut into rings
  • Pine nuts and basil to decorate


Preheat the oven to 200C
You can cut the puff pastry into squares, circles or leave as one large tart
Combine the cheeses, egg and season
Layer the cheese and tomato on top of the pastry and bake for 20 minutes
Serve topped with the pine nuts and basil
