This cocktail is very much inspired by the amazing drink served at The Hotel Chocolat on St. Lucia.
I have to admit, it tastes pretty incredible on a boat in the Caribbean, but a sofa with a view of the rain is pretty good too.This drink tastes like summer – here is to hoping!

100 ml of Chocolate syrup
60 ml Single cream
25 ml Dark good quality rum
10ml of Vanilla vodka
Squeeze of lime

Pour the above ingredients into a shaker with a handful of ice and shake vigorously.
Pour the contents of the shaker into a large glass
Decorate with a sprig of mint and enjoy!
