If you fancy something sweet, but are also watching what you eat, try this lighter, yet delicious recipe.

Wholemeal Pancakes:
110g wholemeal flour
1 teaspoon of cocoa powder (good quality)
3 egg whites (we use two chicks)
1 tablespoon of desiccated coconut
1 grapefruit
Fresh coconut
200ml soya milk (could use dairy)

Combine the flour, desiccated coconut and cocoa powder in a bowl
Make a well in the center and pour in the 3 egg whites and start combining with a whisk
Add the milk and combine until smooth, leave to stand for 10 minutes
Heat a little oil in a pan (medium heat) and fry the pancake mix, ladle-full at a time until golden brown on both sides
Decorate with the fruit and enjoy
If you are feeling adventurous – pour the batter into a squeezy bottle a pipe into the pan into desured shapes (we made hearts)
