This is a great start to the day – nutritious and very tasty. It will keep you going at least until lunchtime.
Recipe:
(serves 2)
150g Red quinoa
Handful of fresh or frozen cranberries
100g of grated pumpkin
Pop the quinoa, pumpkin and cranberries into a pan and cover with water with a cm above the level of quinoa and simmer for 15-20 minutes
With 10 minutes to go – add 2 tbl ground almonds, ground
With 5 minutes to go – add 1 tbl dried cherries (or dried fruit of your choice, 1 tbl date syrup, 1 tsp almond butter
Just before serving- stir through 1 tbl Cocoa powder and a teaspoon of psyllium husk
Sprinkle with any of the following (all of the following as we did)- pomegranate, hemp seeds, pistachios, chia seeds, almonds, blueberry&chia jam
