Cacio e pepe Easy
Cacio e pepe is a swift and delicious sauce consisting of parmesan, pepper and butter.

Ingredients:
- 20g butter
- 1 cup of grated parmesan (you can mix in Grana Padano or Pecorino as well)
- 1 tablespoon of freshly grated black pepper
- 400g fresh pasta (or 200g of dreid pasta)
Method
Boil the pasta first (fresh pasta for 1 minute only and dried pasta for 2 minutes shorter than the package suggests)
Heat 2/3 of the butter in a large pan and add the pepper and fry for 1 minute until the spice releases it’s aroma
Add the pasta – make sure to reserve 200ml of the pasta water before discarding the rest, followed by the 3/4 of the cheese
Give it a stir and add the 200ml of reserved pasta water and simmer for 2 minutes, adding the rest of the butter about half way through
Plate up and scatter with the rest of the parmesan
