Pici Pasta Easy

This is an easy and fun pasta to make. You need 3 ingredients and that’s it!
It’s just flour, oil and water. The dough is wonderful to work, super soft and needs to be had rolled.


  • 300g '00' flour
  • 3 tablespoons of mild olive oil
  • 150 room temperature water


Pour the flour into a large bowl and make a well in the centre and add the water and oil.

Combine with a fork until roughly together and bring together with your hands.

You can also make this in a mixer. Just be very carful not to over-work it. Stop the machine as soon as the mixture comes together.

Wrap in cling film and leave to rest at room temperature for 20-30 minutes.

Cut in half and roll into a rectangle roughly 1/2 cm thick. Do not use any extra flour. The dough should not need it.

Cut into strips roughly 1/2 cm thick and roll them out with your hands until 3-4 times the length.

Toss in a bowl or a tray with a couple of tablespoons of flour and just keep rolling.

Bring a pot of water with a teaspoon of salt to boil.

Add the pasta gradually, to make sure they are separated.

Boil for 2-3 minutes and serve with a sauce!
