Grilled Razor Clams

Razor clams are very versatile and easy to work with – here is a simple yet visually stunning recipe.


  • 500g razor clams
  • 1 pomelo
  • 1 lime
  • 1/2 teaspoon of Sichuan pepper mix
  • 1/2 small cucumber
  • 1 tablespoon of chopped fresh dill

Sichuan pepper mix:

  • 1 tablespoon of pink pepper
  • 1/2 tablespoon of Sichuan pepper
  • 1 teaspoon of chipotle chilli
  • 1/2 teaspoon of dried basil
  • 2 tablespoons of flaked salt


Preheat the grill to high
Check that the razor clams are alive, discarding any that are not
Rinse under cold water to remove any sand and grit
Lay the clams on a tray and grill fro 2-3 minutes until they fully open
Leave to cool down and remove them from their shells
Remove the foot (cut the sack off) and discard the rest
Cut the clams into chunks and combine with the lime juice and spice mix
Leave to marinate for 30 minutes
Cut the cucumber into small cubes and mix in with the clams
Cut out 2-3 pomelo segments and cut into small chunks and add to the clams along with the dill and serve
You can add a little caviar for a touch of extra luxury
