This is swift recipe and a breakfast favourite.

Ingredients

  • 1 cup of cooked spelt
  • 1 cup of rye flakes
  • Large pinch of salt
  • Zest of lemon
  • 1/2 teaspoon of ground sumac
  • Large pinch of chilli powder
  • 1 teaspoon of baking powder
  • 1 teaspoon of chopped chives
  • 1/2 teaspoon of poppy seeds
  • 2 tablespoons of peas
  • 2 eggs
  • 100g ricotta

Method

Start by blending the spelt, rye flakes, ricotta, eggs, baking powder, salt and spices in an electric kitchen mixer
Add the chopped chives and the rest of the ingredients
Preheat a waffle iron and cook the mixture for 8-10 minutes until golden and crispy
Serve topped with a poached egg, more chives and freshly ground black pepper
