Stir fried chilli beef with crunchy cashews

Ingredients:
200g broccoli florets
1 red chilli, sliced
2 spring onion, sliced
Juice from ½ lime
½ teaspoon of muscovado sugar
1 teaspoon of chilli oil
2 tablespoons of soy sauce
1 tablespoon of fish sauce
2 tablespoons of water
For the crunchy cashews:
Handful of cashew nuts
1 tablespoon of soy sauce
To finish:
1 minute steak
Cooked thick brown (or white) rice noodles
2 tablespoons of torn Thai basil leaves
Black and white sesame seeds as a decoration

Start by making the cashews – heat a large pan with no oil in it and add the nuts and toast until golden.
The pour in the soy sauce and quickly coat the nuts and pour them out into a bowl to cool.
Now cook the steak – season with salt on both sides and flash fry on both sides on high heat in a little plain oil, rest for a few minutes and slice.
In a small bowl, combine the juice, sugar, soy and fish sauce, chilli oil and water – this will be the sauce for the dish.
Pour a large glug of oil into the same pan and heat to high.
Add the broccoli and cook until the edges are starting to char.
Pour in the sauce and leave to bubble for a couple of minutes.
Add in the noodles, onion and chilli and coat in the sauce.
If you are happy with the cook of the beef, add with the basil right at the end.
If you would like the beef cooked a little more, just add to the pan for a minute or two.
Serve topped with sesame seeds and the cashews.
