Razor clams are delicious and surprisingly easy to prepare.
Three simple ways of cooking:
1.Blanching – this involves simmering them in a pan, in shallow water. One minute is more than enough – then remove from the pan. Remove the foot, discard the rest and use in one of our recipes (deep fried or ceviche)
2. Steam them in white wine, with fried leek, fennel or just onion and serve whole
3. Grill the razor clams under a really high heat for a few minutes, then serve with garlic butter.
