No need to sweat it out in the kitchen this salad recipe is just the ticket for those warmer days!
You will need:
1 whole cucumber
1 small watermelon, cubed
2-3 sprigs of mint, leaves only – torn
1 tablespoon of black or white sesame seeds (you can also use chia seeds)
2 tablespoons of Mirin
2 tablespoon of plain or flavoured rapeseed oil (chilli or garlic)
Juice from 1/2 lemon seeds
Smash the cucumber with a rolling pin on a large chopping board (to avoid messing up your kitchen)
Break apart with you hands into bite sized chunks, add the melon
Marinate with all the ingredients and leave at room temperature for 20 minutes or in the fridge for up to 5 hours, covered with cling film
Drain before serving
Add seeds and mint and enjoy!
